Dried tomatoes are an easy way to add a shot of intense sweetness and color to a dish. You can buy them, of course, but it’s super-simple to oven dry tomatoes at home.
I made these dried tomatoes as a sweet, colorful garnish for an eggplant pasta dish. The extras made a delicious nibble and salad ingredient toss-in.
Dried (or Semi-Dried) Tomato Recipe
Beefsteak or slicer-type tomatoes, sliced 1/4-inch thick
Kosher salt
- Heat oven to 275 degrees Fahrenheit. Place sliced tomatoes on a plate and sprinkle with salt. Let sit for at least 15 minutes and up to a half hour.
- Prepare a baking sheet with a parchment paper liner and a cooling rack placed on top.
- Transfer tomatoes to the cooling rack and place in oven. Bake tomatoes at 275 degrees Fahrenheit for at least one hour and up to 3 hours. Check frequently and pull them out of the oven when they reach the desired level of doneness.
