This is such ridiculously easy tip for cherry tomatoes. I’m a sucker for the baskets of teeny tomatoes all year long ~ at the grocery store in January and the farmers market in July. I even grow them at home.
The easiest way to use them up is to halve the little gems and put them on my lunchtime salad. My problem is the tomatoes tend to get lost in the produce drawer and I forget about them.
My simple solution: when I’m left with a half a carton or so of tomatoes, I slice them in half, put them in a glass jar and top with a generous pinch of salt. I place the jar of seasoned tomatoes at eye level in the refrigerator, where they’re ready for salads or grain bowls or omelets or whatever weird little lunch I decide to create.
And if I happen to be making a tomato sauce type dish, like the TikTok pasta with feta, I have seasoned tomatoes ready to go.
Problem solved. I’m here all day. What else ya got? 😂
