Because I’m trying to crack down on food waste in my kitchen, this tip from Chef Fabio Viviani caught my attention: placing the whole citrus in a large jar and cover with water before storing in the fridge.
I recently left town for 10 days and, instead of giving away the bag of lemons in my produce drawer, I decided to give this tip a try. I placed the lemons in a jar, filled it with water and sealed it up. When I came home, the lemons looked the same, fresh and yellow, and taste the same, too.

I like to keep lemons around for my favorite citrus recipes like Meyer lemon cheesecake and lemon tea loaf cake.
It’s been just a couple weeks, so it’s too soon to say they’ll last the “five to six months” Fabio claims, but so, far I think it’s a good solution. An added benefit: the lemons are now at eye level, so I know what I have and I’m unlikely to buy more unnecessary lemons at the grocery store. Another win for reducing food waste, right?
