It’s a time-honored rite for gardeners and foodies — standing over your kitchen sink in the dog days of summer, chowing down on a drippy, squishy tomato sandwich. The preferred assemblage is typically white bread slathered with mayo and layered with thick slices of salted beefsteak tomato. You may like a shower of black pepper over all before the top-and-nosh.
Folks say it’s only good if the tomato juice runs down your arms. Hence the need for standing over the kitchen sink.
I like this classic tomato sandwich and try to enjoy at least one each summer. Still, I think there are many ways to make a tomato sandwich. Here’s one I tried this week, inspired by a sandwich from Eating Well magazine.
Multi-grain toast + Goat cheese + Tomatoes
This open-faced sandwich makes a delicious breakfast toast, made especially lovely if you can get an artisan type bread. I’m lucky that French baker extraordinaire Annie’s Bakery brings her beautiful breads to our local Church Street Farmers Market. Her multi-grain loaf is perfect for this easy sandwich.
Tomato Sandwich with Goat Cheese
This is a bit of a no-recipe recipe. After all, it’s three ingredients and it’s sandwich, right? You can’t go wrong here.
With a sharp chef’s knife, slice a ripe beefsteak-type tomato into 1/4-inch thick slices. Place the slices on a dinner plate then sprinkle with your favorite salt. (I happen to like kosher salt, but table salt works just as well.)
Take a couple slices of multi-grain or whole wheat bread and toast however that happens in your kitchen. (Toaster, toaster oven, or oven).
Spread each slice of bread with a tablespoon or two of softened goat cheese. Make sure you get to the corners and don’t be stingy with the goat cheese.
Layer tomato slices on top of the goat cheese. If you’d like, you can sprinkle more salt over the top and crack some black peppercorns over all.
If you happen to have basil bustin’ out of your garden, toss a few leaves over the top. Cook’s choice.
